My favorite is to split the hog down the backbone into 2 halves. Use your favorite pork rub and slow cook on the pit or in the smoker!

We occasionally have southern folks come with wild hog meat, but otherwise we butcher smallish pigs and rub in mojo seasoning then baste in homemade mojo sauce. and cook in one of the charcoal thingy mingys. La caja china cooker.

You cook the pig by placing the coals on the top of the unit.
