Title: Yet another Chili recipe
Post by: LoneWolf on February 13, 2004, 08:59:00 AM
Made this one and brought to the office the other day.  When the Cajun I work with said it was fantastic, I figured I had made something fairly good.  thought I'd share.

2 lbs ground deer(or whatever critter you wanna cook)
2 cans of Chili beans
1 can of dark red beans
1 can of black beans
diced onion
diced bell pepper
diced jalapenos(how hot you want it)
diced tomatos
2 cloves minced garlic
tsp of cilantro
1 pack chili powder
1 small can of tomato sauce
Hot Sauce( I like Louisiana or Tabasco)

Brown the meat(don't overcook it), in a seperate pan place onions, bell peppers and garlic, lightly salt them and sweat them (#).  add diced tomatos, and chili peppers to the onion mixture, cook for a few minutes to blend taste together.  Place beans in large slow cooker, stir in chili powder and tomato sauce.  Mix in onion/tomato mixture, stir in meat and cilantro.  Slow cook for @ 4 hours(depending on your cooker).
Add hot sauce to taste as it is cooking.

If you want or like te stuff, toss some shredded cheese on top of it when you serve it.

Looks darned good.  If you want some great beans, try the heritage varieties from ranchogordo.com.  They give me heritage flatulence, but it's worth it!
