Title: BBQ SAUCE for Pulled Pork?
Post by: Bobby Urban on August 16, 2007, 03:21:00 PM
Ok - Give me some sauce recipes for pulled pork.  I slow cook a nice but all day in the smoker with my best dry rub on it.  Then I pull that sucker apart and douse it in Stubb's BBQ sause.  Now this stuff is good but I know there are some home brew recipes out there that will blow it out of the water so help a brother out and give me the scoop.

Thanks guys - Bob Urban

Thanks guys.  FYI - Al did not send me his secret recipe(nor did I expect that) He sent me some base ingredients and pointed me in a direction.  I will incorporate some of this and some of Toads to come up with my own.

I love this web site!

I made some awesome bbq sauce a couple weeks ago for a hog roast we had.  I didn't use a recipe, here is what I did though:
I seeded a whole bunch of tomatos from my garden, probably 8-10+ pounds or so.  Then I chopped up a couple onions and a few peppers from the garden.  I ran that through the food processor (blender woould also work) and put that in a pot on the stove.  I added about 3/4  bottle of liquid smoke, a half cup or so of vinegar, some salt and ground pepper, and 2-3 pounds of brown sugar.  Stirred it all up and let it simmer, stirring occasionally on low heat until it reduced down an inch or so.

At that point, you can taste the sauce (as if you haven't sampled it a bunch already) and balance the ingredience to your taste. You can add tabasco, cumin, cayenne pepper, more sugar, vinegar, etc.  Whatever you think will taste good.

Depending on how thick you want the sauce, you can just leave it on a low heat and let it reduce down, or if it is too thick just add some apple cider or water.  If you are in a hurry you can mix some corn starch with a little water and add to thicken it.

Oops, forgot that I also put some garlic in there before I ran it through the food processor.

Alright, here is a basic eastern Carolina sauce recipe.

1 cup apple cider vinegar
1/2 cup yellow mustard
white or brown sugar to taste
salt to taste
dash or few Worcestershire sauce

I am a "adjust to taste" style cook so vary this according to your individual taste.

You can add garlic, cracked black pepper, ginger, or other herbs as desired but this base will dress your pork very nicely.

Pork is best with a mustard base sauce or a simple vinegar base sauce. Maurice Bessinger(Piggy Park BBQ) out of Columbia, SC sells a mustard base sauce that is hard to beat. You can order over the net. I'll try to post a couple of recipes tomorrow. Pork is what's cooking at my house when it comes to BBQ.

Anyone have a good tomato based BBQ recipe?  I'm looking for sweet dark brown sauce, mild.  I'm doing a roast this weekend and I have a NC style sauce but wanted one my wife can eat.  She hates vinegar.

Chuck, sounds like Sweet Baby Ray's is just what you're looking for.  Walmart and most grocery stores (in my area) have it.  I love doing homemade sauces of various kinds, but for what you're describing, you can't beat SBR.

Al, I picked some up at Sam's as an emergency backup yesterday.  I'd like to do homemade but with all the other preparation my schedule may be tight.

Blues Hogs or Head Country are the two to beat for commercial made sauces.

I love home-made anything but Sweet Baby Ray's original is hard to beat!
I will try the others though.

Here are a few from one of the BBQ capitals of the world.  Most can be shipped from online orders.  BTW this is my ranking of the sauces as well.

www.jackstackbbq.com (http://www.jackstackbbq.com)   The Best in KC.
 www.haywardsbbq.com (http://www.haywardsbbq.com)   Very smokey flavor
www.gatesbbq.com (http://www.gatesbbq.com)    Lots of hometown choices
www.arthurbryantsbbq.com (http://www.arthurbryantsbbq.com)   Not for the faint of heart you must love molasses based bbq for this special one.

I know it's not homemade but I haven't found homemade better than these sauces that have outlasted all newcomers in Kansas City for over 60 years.  And KC Masterpiece is not the city's favorite.....TOO SWEET.  Good Luck hope it helps.

Go to Sam's club and buy the Sonny's sweet BBQ.  It is as good as anything I have tried.  Sometimes I dr up the sauce different ways to have some variety.

There is a guy that goes by the name of Iceman on the Bradley smoker forum who make a great sauce.  The best I have had for my taste.  The company is Goose Bay Company out of Wasilla, Alaska.  He ships it and it is well worth it.  I am not sure how to contact them other than through the forum.  yardandpool also has some of his stuff I think.  I need to order more as soon as the weather breaks a little.

last month I was looking for something different. I've used Kraft, K.C. Masterpiece, Sweet Baby Ray's etc.. Sonny's has 2 restaurants within 7 miles of my house,I like their sauces in moderation. I grew up on the tomato and sugar based sauces..I needed a change, What I found was "Sticky Fingers" "Carolina Classic" it's mustard based and close to what I was looking for. I bought 8 bottles, some for me and some to share. I'm gonna look over some of the homemade ones listed, maybe I'll make a batch.
