I know a guy that got a bear a few weeks ago and he wants to turn some of it into jerky. I have made jerky from deer, bison and beef, but I am worried about trichinosis in bear meat. With meat like deer I never actually cook the meat, just dehydrate it, and my understanding is that heat is needed to kill trichinosis. Can bear, cat and pork be turned into jerky safely? How?

Bear and pork cannot be jerked raw.
It can be cooked thoroughly and then dried.
Bear and Pork just has toooooo much intramuscular fat to dry safely and properly without prior (and through) cooking.
With that, even though cooked and dried, it will still go rancid rather quick.
