Title: meatloaf
Post by: brettlandon on February 07, 2008, 12:20:00 PM
Here is the recipe for which I am locally famous (isn't that an oxymoron; local celebrity?).  :knothead:

- Preheat oven to 350 degrees.

- 3 Tbs. each: soda crackers (6 or 7); quick oats, instant potatoes; corn flakes.

- 2 Tbs. parsley.
- 1 tsp. salt.
- 1/2 tsp. each: ground sage; ground curry.

- 3 eggs or 2 XL eggs.
- 1 cup milk.

- 1 small onion finely chopped.

- 2 lbs. ground meat (hamburger, pork, venison, moose, ect.).

- 1/2 cup catsup.
- 1/4 cup dark (refiners) syrup or molasses.
- 1 tsp. each: dry mustard; ground curry.

Combine the first 4 ingredients and chop, mash or crush to make a breadcrumb mixture, and place in a large bowl (here bigger is better).  Add seasonings and mix well.  In another smaller bowl, combine milk and eggs and beat together.  Add this to your dry mix, add onion and ground meat.  Mix well and place in a 9x9 pan.  Bake about an hour.
In a 1 cup measuring glass, mix the catsup, syrup, and seasonings to make the glaze.
When your meatloaf is done, pour (or spoon)off excess fat and cover with the glaze.  Return to the oven for an additional 15 minutes.
Cool 5-10 minutes, cut and serve.  Serves 6

I like to mix my ground meat with a little sausage for extra flavor.  Additional diced peppers are also welcome in this recipe, but this is the basic meatloaf that my "picky" children clamor for (including my sorta PETA thinking, kinda vegan, step daughter!).  Enjoy!

that does sound good, only thing I do that is much different is i use cumin instead of curry.  Also if no picky people are around, I put some balsamic vinegar and cheese in a pocket in the middle.
