I save the beef fat I cut off the round roast I use for pot meat and tacos ECT dose any one have a recipe or recommend a way to use this to make some deer sausage? I know to use the pork meat but is there anyone who uses just the fat from beef or pork and if so what ratios?

I have never use beef fat on these three recipes but I guess it would work.
These are my favorite recipes.
Breakfast Sausage
5lbs of deer and 5lbs of pork
8 tbl spoons of ground sage
8 tbl spoons of salt
5 tbl spoons ground ginger
4 tbl spoons ground black pepper
6 tbl spoons cayenne pepper of crushed red pepper
( More if you want it hotter)
3 tbl spoons onion powder
3 tbl spoons garlic powder
Mexican Chorizo
5lbs of deer and 5lbs of pork
5 tbl spoons Paprika
3 tbl spoons Salt
3 tbl spoons Black Pepper
5 Teaspoons Crushed Red Pepper
3 Teaspoons Sugar
3 Teaspoons Garlic Powder
1.5 Teaspoons Oregano
¾ Teaspoons Cumin Seed
¼ cup of vinegar
Deer Brats
15lbs Deer meat
10 lbs pork timmings
¾ lbs nonfat dry milk
½ cup salt
3 eggs
2 tbl spoons sugar
4 tbl spoons white pepper
3 tbl spoons powered onion
1 tbl spoon ground mace
1 tbl spoon ground ginger
1/8 cup tony chacharels Cajun spice
½ cup fajita mix
2 qts water

If you want the best deer burgers 3lb of burger 1lb beef soot..Taste like steak.
