Title: Simple small game receipe
Post by: robtattoo on August 28, 2008, 03:33:00 AM
I say small game, personally I've never tried this with, say, hedgehog or chipmunk but it's great with rabbit &/or skwerl. Actually it's really good with any meat   :goldtooth:

You'll need.....

It's really simplicity itself to do & is ready in about 20 minutes. Perfect one-pot cooking for the campfire!

Cube the meat into 1/2" cubes & quickly brown in a saucepan (big enough to hold all ingredients) with the oil.
Add the ground black pepper & fry for 20 secs or so.
Coursely chop the onion & add this along with finely chopped garlic. Fry until clarified but not soft.
Add the chopped jalapenos (8 slices is fine, but adjust the spiciness to your liking, alternatively use Tabasco) & fry for a minute or two
Add the baked beans & a couple of tablespoons of the steak sauce &bring to a good boil.
Reduce he heat & simmer until beans are overcooked & thickened.

Serve with crusty bread.

I've tried this with Pork, beef, smoked gammon, rabbit, squirrel & venison & it's just great all the time! Perfect in an iron pot over a smoky campfire, with good friends.
