This past weekend I was camp cook at the 3rd annual Minnesota Bowbuilding Weekend.  I bought a 15 lb roast for the Friday evening meal.  Since it was too big to fit into my 14" DO I had to slice it in half and also use the 12" DO.  At about noon Skunkman dug me a hole about 2' x 2' x 3'.  I built a fire in the hole and one next to the hole.  After the fires burned down I put the DO directly onto the coals along side the hole, added some olive oil and seared the roasts.  Then I added about 1 cup of water to each DO, put the covers on and set them over the coals in the hole.  The coals from the other fire were shoveled onto the tops of the pots and then the whole works was covered up with dirt.  Six hours later I dug them up and we enjoyed some awesome beef.  Noon Saturday I made a DO full of calico beans and one full of leftover beef with some BBQ sauce added in.  Saturday night I did chicken in a buttermilk/sourcream gravy and a cherry cobbler for desert.  Breakfast on Sunday was about 2 gallons of sausage gravy and 2 DOs of buttermilk bisquits.  Of all of that, the bisquits and gravy are my all time favorite with the beef a close second.

Another good one that I tried was pork chops soaked in buttermilk and then rolled in seasoned flour.  Add a bit of butter to the bottom of the DO and cook at 350* until done (about 45 min).

When I was in africa, every meal was cooked in the "black pot". Simple, meat, vegies, vinigar,salt, and pepper.

I cook with a Dutch oven often, I also use a potjie. That's a cast iron "pot" with three legs.

You can cook anything in dutch oven that you cook in oven at home,the trick is learning how to control heat in pot.I lov it!

A staple of our camping gear is the Potjie - did not know it was called that?  We like to bake pizza in it for dinner and cinnomon rolls for breakfast among a ton of other recipies.  Match light charcoal is fool proof. or just dig coals out of the fire and use those to heat from top and bottom.

I like this one, but I do think they left out some kind of liquid.  Just dosen't seem like enough for the 2-3 pounds of dry beans they put in the pot.

Never heard of a "Potjie" but have been cooking in "campfire" dutch ovens for years. Everything from biscuits, cobblers and cakes to ribs, chicken, and stews and everything in between. Some kinda good eating.  :thumbsup:

nothing like eating next to the fire with a bunch a people chewing the fat ..
the simple things...
are the best
sausage and beans  
after a long days hunt...

I just started using a 12" deep DO this year. Lots of fun at big gatherings. I have to get a smaller one for home use, like a regular 10". I can't eat that much out of the 12.

Love my cast iron dutch oven!!  Use it for everything. Love slow cooking a rib eye loin in it.....Randy
