It seems like lots of folks are looking for game sausage recipes and it's no surprise given the proportion of ground compared to steaks most processors churn out.
If you are lucky enough to have a sausage maker in town, go you! For the rest of us try this page.

For sausage is it required to mix in pork or can you make straight venison sausage, or would that be too lean/dry?

I don't think it's a must. Yes it will be dry, I don't think it would hold together without being in a casing.
Pork has flavor and fat. Most recipes You see always include some type of fat to be added. Even Deer burger usually has added Beef suet or Pork fat( personal preference what each person uses) added so it will bind together and not dry out when cooking.
