Title: Wild Hog Recipes

Lot of talk about pig hunting but does anyone have any good wild pork recipes.My brother and I want to hunt pigs but have been told a lot of people only make sausage out of meat and if we can't eat it we don't want to hunt them. Roast shops steak ect?

Smoke em!  I smoke nearly every hog I get, but recently since we started trapping them, I've made some into sausage. Its good stuff.

Make sure you keep the loinstraps for the grill. Internet has a ton of recipes for rubs you can use.  Check out  http://www.barbecuen.com/  for a ton of recipes and info.

If you REALLY like to cook, try this...had my exgirlfriend write this recipe down..she was from the Yucatan, and they can flat out cook swine!

2lbs of pig (odds and ends, ham, shoulder...dont matter)

Juice from about 5 or 6 limes

1 package of Achiote. Its also called Annato, I think. The mexican supermercados (and walmart, I was just told) sell it in little square boxes with a cartoon pig on it. (You MUST have this stuff) Its almost like a clay consistancy sometimes, so thin it up with the lime juice or water.

5 or 6 tomatoes (mashed or cubed)

2 big jalepeno's (chop em up, leave the seeds if you want the pain)

Small handful of cilantro, chopped up

2 cloves of garlic, chopped up

1 cup of vinegar

1 tbsp of salt, and another of peppercorns

Pile it all into a dutch oven (or something with a lid) and put it in the oven for 400 degrees, until you can shred it with a fork.  

You can use more than 2lbs of meat, just need to adjust the amount of ingredients.

Get some tortillas and eat it like soft tacos.

Dont let anyone tell you that wild hogs aint no good to eat! Its all in how you prepare it. Good luck and good eatin!

Cam is the man with the hog info. The one wild hog I ate was excellent. Ground meat made into hamburgers grilled. Sausage and pork chops. All very tasty.

A crockpot is your friend.
One of my favorite ways to cook them up is to take a small ham or shoulder, or a portion of a bigger ham or shoulder. Doesn't matter. Just a hunk of meat about the same size as the crock pot.
Cut up an onion, a couple of carrots. Throw it all in the crock pot and cover with your favorite seasoning. I like everglades heat. Pour in a couple of beers and let it go overnight on low. In the morning pull the meat out and shred. Remove all bones. Cook up a couple cups of rice and put the meat and the rice back in the crock pot and let go for a few more hours. Good stuff!

Anything you can do with a domestic hog you can do with a wild one...chops,  picnic hams, sausage, shoulder roast, loin roast, bbq ribs, bacon if the hog is big enough...
Don't waste it all on ground meat!
Find a good meatcutter and enjoy it all.

thanks to everyone post,I will not be detoured from hunting wild hogs. I can cut meat and just needed to be reassured that they are edible from snout to tail.

I love them on the smoker if it is a sow or small boar. Any boars over 100lb I use for sausage since that is great too.

For the smoker I'll brine the ham for a day if I have the time. Then I'll mix up a 50/50 mixture of worchester sauce and spicy brown mustard and slather on the shoulder and then put your rub on. I use a kansas city rub,granulated garlic and some brown sugar. I'll let that sit for at least two hours. Then on the smoker for as long as it takes to get to 195 degrees so it shreds easily. I love it with rice or as pulled pork with a nice bbq sauce.

smokem,grillem,BBQem and grindem. make good meatloaf spegettee taco salad, add no fat. I will say shoot the alilin 100# er smallers the best.   TJ
