Leeks are popping up all over the woods.Took a walk this morning doing a little scouting,picked a bunch off leeks.Does anybody harvest these,do you have to dig them or can you just pull them up like I did?? whats the best way to fix them.Any good recipes??

The smaller ones you can probably just pull up, the bigger ones you might have to dig a bit. Shake off the excess dirt, and rinse well when you get home. You should split them down the middle and run them under water to remove any dirt that might have gotten trapped between the layers as it grew through the soil.
You can braise them in chicken stock and butter until tender. You can slice them and saute them in butter and serve over a nice grilled steak. You saute as above then stuff into a chicken breast with some swiss cheese and ham then bread and fry.

The leeks (ramps) don't grow down here, but last weekend I hunted morel mushrooms with a group. One of the guys had brought some ramps down, and we had them sauteed in butter with morels, and it was great! A little garlic and wild chives in the pan, too.

If they are sping onions andnot leeks, the best way is to just toss them with some olive oil, salt, and pepper, then throw over an open fire and grill them up. Delicious themselves, or servd with a romesco sauce. A sauce of garlic, roasted red peppers, olive oil, bread, and salt and pepper. put it in a blender and whirl away.

Yep....they are coming up everywhere.
My wife has been "transplanting" some every year into our garden......they're coming up as well. Won't be long till they are nice sized. Just in time for the morels!
