Loking for some new things to do with the leg of turkey.

Put them in a slow cooker seasoned how you wish.
make hot turkey sandwiches with the end result.

Second the way River Rat said. The legs of a wild turkey are full of highly developed tendons and ligaments. By cookgin them in a crock pot, or braising them in the oven, long, slow, and low, the meat will be fork tender and fall off the bone. Very easy pickens then.

What do you put in the crock pot with it? I've heard BBQ sauce, and maybe its how you do it, it just seems like ALOT of BBQ sauce.

I use barbecue sauce, and put a layer of onions under the thighs and legs in the crock pot. You don't have to cover the meat while it cooks. You can always add more sauce at the end if needed. Makes great barbecue sandwiches!

One thing to remember when using a slow cooker is that you can never use the same amount of liquid that you would use either in a stovetop braise or an oven braise. The meat exudes a lot of juices when cooked in a slow cooker, and for lack of a better term, "waters" down the gravy. So, you do not need a lot of liquid to start with.

We put ours in a pot with chicken broth and water and slow boil it til the meat falls off the bone and then use the broth and the meat to make a great soup. Use some imagination noodles rice veggies what ever works. Good Luck

Try a meat grinder....then make paddies.

I bone mine (and then cut into long strips) and put them on a skewer. Marinade them in a thai-peanut sauce and cook on the barbecue.
Invite some friends over, tell them about the turkey, and hand them a glass of white wine.
Better yet, do all that and buy me a plane ticket to come over for the barbecue.

I'm going to try cooking them in a pressure cooker this year. A couple of years ago my wife cooked up some pheasant I got in the pressure cooker and served with a curry sauce and they came out excellent.

I was just back home for a visit and my uncle gave me some turkey jerky and it was awesome! He said he only uses the legs and thighs and whatever marinade or rub you like for deer works fine. It was real good. I'm gonna try it with some I have in the freezer.

Ossobuco... Lot's of recipes on the net.. Works well
