Any body have any? Need something that I can talk my wife into trying.

I would cut into nuggets, either bread or batter, then fry them. No one can resist gator done that way. More adventureous is to take a "cutlet" and tenderize it with a jacard, then do as you would any chicken or veal cutlet. Bread and fry, marsala, franciase, parmigianna, etc...
