Title: This was good for Christmas dinner...
Post by: kevin_h on December 30, 2011, 05:00:00 AM
Since I did not get a moose this year,,,we had to settle on a new york strip strip roast...

But the recipe is still good,

6-8 hrs soaked in apple cider/juice

Then your favorite dry rub on both sides, generous amounts. I used an apple wood rub and a smokey bourbon rub from Sportsman's ... Wrap the meat in plastic wrap for 12 hours in a cool place.

When ready, 3 to 3 1/2hours on low-med heat in you bar-b-cue...

Don't forget to spray the meat with apple cider about every 30 minutes..

Man, that sounds great!  Was it rare, medium or well done when you sliced it up?

It was a combo, the thinner outside sections were done with just a touch of pink, but the thicker middle sections were more rare.

I like to do 1/2 apple cider and 1/2 Southern Comfort. Coat meat with a dry rub or steak seasoning then marinade in cider/SC for a couple hours!!
