Ok gang. I've got one shot at this! LOL!
My wife and kids are going to try squirrel. None of us have ever eaten it.
If you had one chance to prepare a squirrel meal for the family, and hope to not blow any future chances ever again, what would you do?

I would keep it simple. Do a stew in the slow cooker. Good luck, but squirrel really does taste good.

... I always cook em cacciatore style slow in a pan and served it over rice or large egg noodles ! Good Luck !! :thumbsup:

I'd make squirrel dumplins

Squirrel gravey over bisquits and mash potatoes. I also love sauteed brains with eggs.

You have to boil the meat until tender. Then flour the pieces, and pan fry slowly until golden brown.

Brown the pieces then put them in a slow cooker. However you want them, stew, brown gravy, cacciatore, chicken broth with lemon. Anyway you do them, they are delicious. Truly, the other white meat. You can boil them until tender, pick the meat from the bones, and add that to a traditional pot pie recipe. Enjoy!!

Had plenty of squirrel pot pie as a boy, don't remember a bad one. Mom made Dad cook them as she wasn't real big on tree rats in her kitchen. That chicken broth with lemon sounds like a winner, never had that one.

It's like Franciase. Chicken broth, fresh squeezed lemon, splash of white wine, butter, parsley, salt and pepper. You can add capers if you like too. Serve it over pasta.

If you want something real easy. Boil the squirrel and then pic the meat off the bones. In a saucepan, combine a can of cheddar cheese campbell's soup with the recommended amount of water. Heat and add the shredded squirrel meat until a smooth consistency. serve over white rice or noodles of your choice. Quick and delicious.

Lots of great ideas for cooking squirrels here. I'm gonna have to kill a lot more this year than usual just to try them out!

Many good recipes. A tip, if you shoot a young tender gray squirrel you're good to go right into whatever recipe you like. If you shoot an old gray or ANY Fox Squirrel you need to par-boil it first until tender. My Mom would always fry squirrel like chicken - we loved it, especially since there was usually plenty - a heaping platter of fried squirrel with mashed potatoes and gravy yummmmmm.

I was never a fan of eatin squirrel until I cleaned one, stabbed it with a stick, threw some salt on it , and roasted it on an open fire. I don't reckon I'll eat them any other way.
Maybe not the best way to introduce your family to it but give it a try sometime.

We like it fried. In dumplings,but every one at church likes them in dressing. That's cornbread dressing. I'm going to try a squirrel chile for next church potluck.
