Slice salmon into "cutlets" and make them Franciase style. Dredge in flour, then beaten egg. Fry on each side and remove. Add 1/2 stick of butter to the pan, squeeze in some fresh lemon juice, some white wine, some chicken broth. Bring to a boil and reduce to a simmer. Add salmon back in and simmer in sauce for about 3 minutes. Add fresh chopped parsley, and season with salt and pepper.
Start the grill. Rub salmon with brown sugar, onion powder, salt, and black pepper. Either place in a cedar plank, or doubled up foil sprayed with PAM. Cook until your liking.
Make a crabcake mixture, I like to add shrimp to it also. Season a whole side of salmon with fresh squeezed lemon, salt, and pepper. Spread the crabcake mixture over the salmon. Melt a whole stick of butter and pour over the top. Bake at 400 for 25 minutes.

I make a sauce that I baste the fish with. Got this from a cooking mag.
2 tablespoons Raspberry preserves.
2 tablespoons honey.
1 tablespoon white vinegar.
My wife and I really like this, sweet and a little tart.
Just before I am ready to remove the fish from grill I baste some on. It kind of candies on the fish, much like BBQ sauce.

Mix up some mayo with montreal steak seasoning. Spread it on the fish, grill, and eat! Never any left at the firehouse...

We put a thin layer of mayonnaise on just the top side of the Salmon steak and than add your favorite seasoning. We lay the steak on aluminum foil that we wipe lightly with olive oil. Place it on the grill for 10 minutes and enjoy. There is no need to flip the steak.
This is by far our favorite recipe and the thin layer of mayo makes the flavor incredible.

Smoked salmon, put a cup of water in the smoker in a bowl for moisture then smoke for 4 hours. Use apple wood or any fruit wood. My Uncle would always bring us smoked salmon as a kid it is so good. I smoked some trout and striped bass not long ago it was awesome.

Place some orange slices on a ceadar plank then put Cajun seasoning on both sides of the salmon. Then place the salmon ontop of the orange slices. Then place more orange slices on top pf the salmon. Put on grill. The oranges Caramelize and makes it taste great.
