Here is a 5" blade chef knife I have up for sale.
The handle is very nice stabilized Amboyna burl, with carbon fiber pins, and a center mosaic pin.
The Blade is 1095 that I clay quenched and polished for a very nice hamon.
This is the size knife that I would use a lot in the kitchen, it is very comfortable for almost any task.
Here are the specs.

Oal - 9.25
Blade - 5"
Steel - 1095 .125" thick at spine
Handle - stabilized Amboyna burl, black g10 liners
Pins - mosaic and carbon fiber
Features - tapered tang, polished hamon
