hey guys need you expertise here...in your oppionon, what metal sharpens to the sharpest the easiest?....if I had to pick longevity then I would say middle of the road edge life....cable, damascus, carbon family, stainless..?

Joe,
Without a doubt, carbon. Whether plain carbon or damascus. For middle of the road performance, Chevy truck spring..........Ha! :D Get it? middle of...the.... road.........nevermind.
Bad joke, but it does make a good knife. I use it a lot.

Chevy truck spring is 5160 or mighty close to it. Most of the time I buy it new, but for some of my bigger projects I'm not above forging it out of a spring. I think it does the steel good to forge it down.
By the way, I do drive a Chevy. So far, one with all it's springs.
