Okay, this year I have a problem bear, who if he doesn't change his ways by Oct. is no longer going to be a problem. I've eaten about everything you can think of....except bear, mainly just due to lack of opportunity. First of all, I field dress everything I kill, but a 400# blackie is different than the scrawny whitetails I'm used to putting on the table. Not "counting my chickens", but I'm looking at options to get it out of the woods short of having to quarter and pack it out...but I'm not above it. I mainly need cuts/recipe recommendations. I'm still in denial that my elderly Amish buddy retired from making the best smoked venison summer sausage on the planet last year....I called just him just last week after a year of withdrawal and begged like a spoiled child to no avail. How do you eat bear?

Steaks, Roasts, Stew Meat, and Burger. Also, the fat is cherish by bakers, so do not throw that away. Bear is delicious, and you will be rewarded with many tasty memories of getting rid of that problem.
Important, is that is you like your steaks rare, you cannot do that with bear. The meat may carry bugaboos like trichinosis, so cook well. Not dry and dead, but just well until 165. Use a wireless probe thermometer.
As for the other cuts, use them as you would in other recipes. Bear Stew, Bear Roast, Bear Bolognese with the Burger, etc...
