I've got a safari Tuff tab- I think I need a larger size as my finger tips (3 under) on my pointer & middle finger catch the string every time and I'm getting some good calluses built up.
Wondering what your favorite 3 under tab (cordovan leather face) is?
I also shoot off an elevated rest-how do you like the Hoyt super rest? Going to give that one a shot as I know it's significantly thinner than the Bear style weather rest

I use a Yost tad I use both the Brass Pro tab and the Predator both are cordovan Large.

Hmmmmm. There must be something in your release that causes your fingers to catch the string. They should just fly out of the way at release. My fingers extend beyond the tab when on the string. I like the solid feel of bare finger tips on the side of my face at anchor. Makes for a tight anchor. No problem with the string raking my fingertips unless I pluck the release.
A high drawing arm elbow will also cause the fingers to vertically torque the string, which will cause the string to abrade the fingers.

I personally like the ballistic nylon tab. Para cord loop to hold it on your finger.

I use Bear style weather rest on most of my recurves. What issue are you having with the width of the rest?
I use this tab in size large. They have the sizing recommendations on the site. I have long fingers and they extend past the tab. I pretty much shoot everyday and I don't have any calluses.

I like Black Widow cordovan tab and a springy rest if you have a plunger hole, Super T-300 hunter if not.

My arrows are showing just slightly stiff-I’m not going to cut into my riser so I figure a thinner rest may help alleviate that issue.
I’m honestly not sure about my release. Trying out the Tom Clum method, I’ve just always been a plucker trying to break that habit
