I'm am new to shooting a recurve. I've only been shooting for about a month. I am shooting Gold Tip 5575 arrows and recently I had them flying straight.
This weekend I took the rubber rest off of my Bear recurve and put bear skin in the shelf to shoot out of.
At the same time I trimmed my arrows about an inch and quarter.
Now my arrows are kicking hard left.
I know that trimming the arrows changes the spine, but I'm not sure if its more the arrow or the new rest.
Where should I start?

-if your a left hand shot, shortening your arrow that much stiffens the spine, and they will kick left.

1 1/4" is a lot on a carbon. Try some heavier points and see if that brings you back towards center. I am assuming you are a right hander because left is stiff for a rh.

I shoot right handed and I'm pulling 60#.
I'm shooting 125 grain tips with standard inserts.

You have changed two major components. By removing the Bear weather rest and shooting off the shelf you have made the bow more center shot, which should have increased your spine need and widened your usable spine range. And shortening the arrow stiffened the spine. If your bow is a Bear recurve it probably has a flat shelf and sight window. Try placing a tooth pick under the bear skin, both on the shelf and strike plate. Place them directly above the lowest part of the grip. See if that changes anything.
