Got my first Bear . Black Widow PLX Osaage . 20 yd shot and the Bear went about 40yds. The death moan is something I will not forget. he weighed 200#.

that's cool. I was bummed that my bear stopped showing up all of a sudden a few days before archery season opened.
I'm hoping that I can snag my first black bear while I'm deer hunting. He's in the same area within 300yrds.

Great bear,LOL, love that shirt, I think that resturant is the state resturant of Georgia, never seen so many in one state, almost every exit on the interstate has one and a bunch of times one on each side of the interstate,LOL.

nice bear.. The death moan is pretty eerie sound, Looks like some good table fare. Nothing better than a smoked honey bear ham or chorizo.

Wow! Congrats Stan!!! I thought you were planning to hunt with the recurve this season??? Awesome job!!! I have not seen a bear yet this season and so far the deer seem to want to always be at 30 yards or better.

My friend ApplePie killed one in my hunting woods the season before last. I am sold on woods-fed bear meat! Rich and sweet! We took the heart, sliced it into chunks and wrapped said chunks with bacon. Grill over fragrant hardwood and dip into your sauce of choice.
I think I will bring water chestnuts and hot Chinese mustard into camp from now on, so that my game-meat Rumaki will be a tad more authentic.
The ribs were roasted over the fire, with a little dry herb seasoning. Wondrously good! Simple grilled bear meat is incredibly tasty, and easy-peasy for the camp loafer/chef to tend to.

when mixed with a little pork fat it makes excellent sausage, It also makes good jerky and is really good brined and smoked like a ham. THe larger roasts are good if you rub them with a good spicy rub and smoke them for a day or so. Their not half bad as just standard old steaks. There are a couple of places up here that will make them into a honey smoked ham that you can slice thin and use as lunch meat.
As long as they haven't been eating fish black bear is excellent table fair. I doubt you get many fishy bears down there but we run into some here that stink so bad of rotting fish that their not edible, even the meat takes on that nasty fish smell.
Here is a chorizo recipe my buddy uses
10 lbs ground black bear meat
1 lbs thick cut bacon ground into bear meat
6 Tbsp salt
1 cup vinegar
5 Tbsp paprika
3 Tbsp Red pepper, ground or crushed
8 cloves fresh garlic, pressed
1 Tbsp oregano
2 tsp black pepper, coarse ground
1 cup water
3-4 finely diced jalapeño or pablano peppers
Grind the meat a couple of times and make sure the bacon mixes into the meat well. Sometimes black bear can be a little stringy so grinding it well helps.
Add all remaining ingredients and mix thoroughly until all the spices are evenly distributed.
Stuff the chorizo into a 1-1/2 inch natural casing. Hang chorizo to dry overnight in a cool dry place. You can also use as loose ground sausage if you prefer.
You can substitute Southwest chipolte seasoning for the crushed red pepper if you don't like it as spicy. Also sub green pepper for diced jalapeños.

Bear meat contains a god amount of fat, so I don't add any to it. It is a good "wet" fat, not like venison paste. You might try a good old-fashioned pot roast. The meat will "string", but they are tender strings, like beef, so that is no worry.

Given the choice I would choose bear steaks over deer any day. UMMMM Love bear stew also.
Sorry I cant help with any recipes. I leave that up to the pro.Although, I am awful good at eating.
