When choosing the center cut option, there are plus and minus (-) numbers above and below "0". In which direction does it go? For example, 0.0125 and - 0.0125. Which one is before "0", or shy of center, and which one is passed center? Sorry, my math isn't the greatest!

I believe negative means past center and positive is shy of center

Yes, to above. Do not forget side plate material in calculation.
