BigJims Tip for Hog hunters

If you are fortunate enough to shoot a hog, make sure you don't leave the ribs behind!!!

In the past, I or we have quarted up our pork flavored gifts and left the ribs behind but no more.

two years ago, my brother shot a 140 lb boar and he cooked up the ribs and they were outstanding. The next few pigs weren't really big enough to save the ribs, but last year we had several that we did save ribs off of.

Anyway, my buddy Preacher smoked up some ribs over thanksgiving and twice I am left with the decision to go lay down and sleep it off, or waddle back to work in missery from gluttony.... buty I haven't learned my lesson cause I'm sure I'll eat too many next time too.   :)

Yep, though ribs are good but if they are too small to smoke get your turkey fryer out and rub them down with Cajun seasoning and fry. Now that is good the smaller the better.

Absolutely!! If I clean a hog I save the ribs!!
I smoked these a few weeks ago, finished over charcoal with BBQ sauce.  Sorry for the crappy pic, I was hungry! Lol

you guys are  just being mean making me hungry like this  :)   Cant wait till I get to go to OK and try to get pigs with my buddy. I want to put a smallish one in the ground hole next time.

Last few pigs I've kilt I like to cut the meat from between the ribs and use it for al pastore tacos.

I'd add that deer ribs are pretty darn good as well.  Been eating them for more than 30 years.  I usually steam them in a covered pan for about an hour, then put them on the grill and baste with my favorite BBQ sauce.  Yum.  Yum.

I'm thinking that the ribs I was eating might just  have came from drewsbow pig...or maybe not. Hard to tell as the freezer was full of bags and little Barb said "Do Sumthin bout that mess" so I said to Preacher "do Sumthin bout that mess" haha.

Worked out in my favor   :)

makes sense,, did you cut the rib tips off and just use the thicker back ends or make two eatable ribs from one full length rib?

I have never kept a rib from any animal so a serious question

The few I've gotten I've cut off the ribs before I took the rest to be processed and smoked them! very good
