What's your favorite veggie recipe?

We're having a big ole elk roast on Christmas and the wife wants a different veggie recipe to go along with the mashed taters.  Got one?

Lon, take whole green beans blanch in boiling water then shock them in ice water to stop cooking. Sprinkle with salt and pepper, onion powder and little Cajun seasoning and a little brown sugar. Take 6 to 8 green beans and wrap with a half slice of bacon and skewer with a toothpick then place on a cookie sheet in a 350 degree oven until bacon starts to crisp. These are very good.

bretto, that is a different green bean recipe and better than plain ole steamed green beans...which is one reason for my post. This sounds good.  :thumbsup:

This is from Our Friends in Baton Rouge We tried it at Thanksgiving instead of green bean caserole and it was a big hit. You can vary the spices to Your own liking, play around with it and see how You like it. Have a great Christmas dinner and a safe Holiday season. bretto

I am not sure what this is called...

take zucchini and cut in half lengthwise. Scoop out the middle of each of your halves, and reserve on your cutting board.

Add to that some pimentos,fresh parsley, tomato, and mushroom pieces.

Chop all of them pretty fine. Add a good amount of fine bread crumbs of your choice, and parmesiano reggiano or romano cheese like you might put on spaghetti. Add some sea salt and fresh cracked pepper to your taste.

Mound up this mixture back into the zucchini "boats" and place on a cookie sheet in the oven at 350 degrees.. cook til the zucchini is where you can poke it with a toothpick, and your bread crumb/zucchini/tomato/parsley mixture begins to turn golden.
