Hot Sauce

Anybody have a recipe for hot sauce.  :mad:

Tabasco is made by mashing the peppers with salt and letting them sit for in barrels to ferment, then they're pureed with vinegar, strained, and bottled.  You can take any hot pepper or blend of peppers you like and try the same.  You can add herbs, spices, fruits, veggies, etc.., then puree and add vinegar to taste, then strain.  Remember to taste for salt.

Are You looking for pepper sauce or more of a picante sauce recipe?

A few years ago I grew Tabasco's , Chili's, Jalepeno's and Cayenne's in my garden and processed the peppers in a food mill and added fresh tomato juice and vinegar, sugar and simmered on the stovetop in a kettle doctoring  a little here and ther with spices and ended up with a very good hot sauce that I kept refrigerated. I think I added some BBQ sauce to help thicken it up and it was EXCELLENT IMHO.  Take a chance and try some of these recipes and let us now how it turns out.  For me that is the fun of it is making it better than the last trial run...

here is my southwestern version:

all this goes into a blender (a food processor might do it)
-bunch of dried chile pods seeds and stems removed (mild, medium, or hot)
-3-6 cloves of garlic (can roast it also)
-splash of OJ
-oregano
-salt
-almost boiling water (just enough that when blended it makes a thick paste)

you can now serve it as is or bring it to a boil on the stove top
