Beavs

Howdy folks, I'm fixin' to relieve my ponds of some 4 legged, dam damaging,hole diggin', water stopping, dang beavers. I hate to waste game, no matter what kind, I'll keep their overcoats, but was wondering if anyone has a recipe for the critters? Thanks,

Lots of good meat on a beaver. We quarter them, put them in a pressure cooker for about 40 min., take the meat off the bones,cut into smaaaaal pieces,add sauce,and have a sandwich. Yummm!

Very good eating, rich meat.  I just skin/head/gut them & roast whole in a roasting bag in the oven.

Pretty good on the smoker. Kind of lean but pork rubs work good.

Old trapper down the road grinds in with his venison, about 30% Beaver 10% fat 60% Deer.
