Jerky - too late?
« on: June 23, 2010, 11:43:00 AM »
I have never done venison jerky before so this year I had the butcher cut up some strips for me.  The problem is I forgot they were in the freezer and just saw them this past weekend.  Is it too late to make jerky out of what I have?  I don't have a smoker / dryer so I was assuming I would have to do this in the oven for many hours?

It should be fine, I have made jerky from beef that has been frozen for two years and it worked great.

Yes, always use frozen vension. Stinger, I use electric oven on low setting wich is about 150-160 degrees. Put a wooden spoon in the dooor to kind of to keep the temp low as possible.

Put in before going to bed at night and usually will be done in morning. First time you might want to do it on a day off.

Jerky is gooood!

Thanks guys - just what I wanted to hear!  Now I need for the temp out here to drop below 95 for a day or so before I heat the place up with the oven all all night.

Have you tried any of the electric dehydrators I have been using a Mr Coffee for years and love it..should be less then 40 dollars.

I spray the trays with pam or brush them with canola oil first makes clean up and removal easier also ..
have used last years dear for jerky .. cut it when frozen also works best..if you had a way to hang it,  and keep the flys off you could make it outside a few feet over a smokey campfire
