Spanish Rabbit

Hi guys - total noob to bowhunting but I've chased a few bunnies and cooked a few rabbits and I thought you might like this recipe. It's both really easy and really delicious.

2 tablespoons of tomato puree
1 can of beans
a couple of cloves of garlic
Peppers 3 or 4
Onions 1or 2
A big bunny or a small chicken or both
Half a chorizo, sliced
Smoked paprika (the smoked stuff really is worth the effort to track down)
Olives a goodly handful
Stock .5 litre or a pint
Wine 1 big glass or more (rioja if you have it, plonk if not)
A tablespoon of dark sugar

Fry some chorizo, set aside the chorizo
In the fat that’s left caramelise the tomato puree (i.e burn it a bit)
Fry onions and garlic
Set aside the now coloured onions, tomato puree and garlic.
Add rabbit (and or chook), brown and then set aside.
In go the peppers.
Put meat, onions and chorizo back in
Add tomatoes (1 tin per rabbit)
Add smoked paprika (at least half one of the little jars)
Add olives green or black to suit your preference
Add beans
Simmer 1.5 hours or until tender

If it seems too thin – turn up the heat
If it seems to thick - add more wine and or stock

Serve with rice, or bread or fried spuds, and the rest of the rioja/plonk

Sounds great! I'll have to try it. If you don't mind me butting in here, should you add that people need to look for Spanish Chorizo, not Mexican Chorizo? Most chorizo that people here in the U.S., especially our Southwest, are familiar with is Mexican Chorizo which is nothing like the Spanish. I noticed you were from the UK and not sure if you're familiar with Mexican Chorizo.

All the Spanish foods can be found in the U.S. online at La Tienda.
Heads Carolina, Tails California...somewhere greener...somewhere warmer...or something soon to that effect...

Its a good thing you said something, I would have been buying chorizo from the store here in south Texas.

Looks like a good receipe....
