Mushrooms and Stumping
« on: November 05, 2010, 02:15:00 PM »
I headed out to the woods with my good friend and his wife yesterday for some mushroon hunting and stumpshooting. Here in the NW, we have a wide variety of mushrooms and the big rainfall we had a few days ago followed by 60 degree weather was perfect.

We found 8-10 lbs of Matsutakes and a couple boleets, so I have a request for you experts.

Can you provide a favorite recipe? (obviously, sauteed in butter is tough to beat!)

and...

What is the "best" book/guide for picking mushrooms?

I'll dig around for a recipe for the "hen of the woods".  It is pretty basic.....called a fricassee.......pretty much a saute but you add additional ingredients.  In this particular case, goat cheese is one of the ingredients.  It came from a seafood restaurant.  Seriously delicious stuff.  You might even find a variation of the recipe on the net.

Buy a book for the west coast for IDing shrooms.

You folks have the motherload of morels and chanterelles out there!
