Does the weight increase as you draw the bow down the tree?

I don't understand the problem then. If you draw the bow down and the weight is increasing, all ya gotta do is stop pulling when you reach your intended draw weight and then tiller from there.

the scale should stop when I get to peak weight of what I want to of lets say 55# @12" but it keeps climbing up and down and doesn't keep the holding weight when Im holding it steady as I can at 12"  it should stop, thought there was a way to get the actual peak weight instead of the continuous weight

I have the same scale you are talking about. I am not understanding what you want the scale to do. When I am using the scale on my tree I read the poundage as I am pulling. It is upside down but none the less I read the scale as I am pulling and will stop when I get my desired weight. It may be changing if you have any sort of bounce or movement in the way you are pulling.
When I reach my weight say 50# at 20 inches, as I release the heaviest weight that I have pulled will still be there on the screen. Maybe if you turn on the scale and just zero it out it will clear your problem.
You must hold the weight for a moment as well for it to register. If I am exercising the limbs I've noticed that the weight will change on the screen because I am not pulling to the exact spot every time.

Hold the mode button down until the screen reads P-L. That will make the weight go up and down as you draw the bow. I adore my X-Spot as much as my Shinto rasp.

PD. I did that. I think there is something wrong with it. Even on a 30x kids bow it's not accurate. Well that sucks. As I never really used it much

Plus the weight is not registering even if I hold it still for 20 seconds

Hang the scale up with a weight hanging  on it. If it reads a constant weight then it is you that is the problem.
