Steam or dry heat

I'm trying to remember when to use which for straightening staves.

I have an Osage stave I picked up years ago (10ish I'd guess). I'd like to get some propeller twist out along with getting a little reflex.

I was always told to use dry heat for dry wood, and steam heat for wet wood

Dry heats works well for removing twist and adding reflex. You can do both at once by using small wood wedges as you heat and clamp the stave to your form.
 I use a bit of oil on the area to be heated unless you also want to temper the belly some.
