I haven't tried it, but it doesn't seem like a good idea.
Conventional thought is you want your core have good weight to shear strength ratios since it will have glue forces on both surfaces. Maple, walnut, elm, hickory, and even oak all fit the bill.
Ipe is an excellent belly wood but I don't think it's all that great in shear, and it's heavy.
I wouldn't use a core that's stronger than the belly. I do plan to try a bamboo/ipe/ipe tri lam though.
