Heart is prepared & vacuum packed for future

I made one Roast into Corned Vension and it too was awesome! It was very lean so I switched it up and made a Reuben Dip with Sauerkraut, Dressing, etc... and served it with Garlic Melba Toast... Sorry, no pics! It got eaten so fast :dunno:

Uh, well, if that doesn’t get a guy ready for supper then nothin will!!!!!

All I can say is that tast test #1 of the Jalapeño Summer Sausage was a hit for the whole family all the way down to my 6 year old daughter who thinks salt is spicy :biglaugh:

Looks great kaz,. I will try the bacon wrapped back strap on my Kamado. 

I have tried the corned venison and it was quite tasty. Mine was a bit salty but I had to brine for an additional 24 hours due to an emergency that arose
Next time will follow that recipe closer. 

This year I made pickled venison heart, not bad, makes a good snack. Plenty of things you can do with that meat most throw out.

Now Ya Done Did It KAZ !!!  The photos of the bacon wrapped back straps just ruined the heck out of my after-the-holidays self-imposed starvation diet.  I'm heading to the freezer to pull out a couple venison steaks for supper.  Thanks for sharing the photos and for sharing the blame of my limited will-power.   :goldtooth:
