Good Eatin'

My wife and daughter have flown the coop for the weekend, and left myself and my boy home alone.  I called him today from work and he asked what we were having for supper.  I had him pull out 4 packs of venison-pork sausage.  He asked why so much.  I told him that we would eat it all weekend!  I took a boned out deer and hog worth of quarters to a local butcher and he made me this awesome sausage.  He is a butcher at a local grocery store that does this at his home on the side.  I got back 70# of sausage and he only charged me $90.  What a deal!  This is almost done.  I'm hungry.  Gotta fly!!!

 
I didn't claw my way to the top of the food chain to eat vegetables!

Wow...some spicy brown mustard and poppy seed rolls...and a Negra Modelo in the other hand...whew..the only thing better would be going to B&J Seafood in Darien, GA for the all you can eat fresh seafood buffet on steak night!

Yeah Roger?  How about that heart?  How is it cooked.  Looks like it was just fished out of a week old gut pile.  :)

Just trying to be funny, but am interested in how it was perpared.  Trying to expand my culinary tool chest.  I usually slice mine and pan fry.

Nope, the peppers were plain, but we have stuffed them with ground venison before. Ha! The heart was stewed all day with onions and bay leaf, salt, pepper, and then served cold sliced. Primo TV snack food!

Does it come out tough when you fry it?
