I've just bought some POC shafts and was unsure as to which way the grain should go? If I was looking down the end of the shaft would the grain run horizontal?

Yes. You want the grain towards the bow that is usually the stiffest side. Make sure you put these >>>>> pointing up and away from you.

YES.. the lines run like this - so the string will be 90deg's to the lines.
