I have a favorite epoxy that I started using in Germany. Uhu epoxy. I've only seen UHU for sale as the soft-hold glue sticks in the States, but I finally found an importer for the epoxy. It would be considered a 24-hour epoxy, but it more than triples its final holding strength and the cure time decreases with temperature. It can be cured at up to 200 degrees C which is way hotter than the usual handle material can stand on my knives. I usually cure it at 170 F because that is as low as my oven goes. With Micarta, though, I've run it up to 250 F and it cures in 1/2 hour at that temp and you have to grind it off to break the bond. You can't chip it off.
