scraping a wild pig?
« on: August 14, 2007, 05:34:00 AM »
Has anyone done this?  If I wanted to do a whole roasted pig with the skin on, how could I set up to scald and scrape it?  Will the coarse hair on a wild pig come off well?

Thinking of doing a cochon de lait...

I have, many times. If ya have something that it will fit in, heat water to 140 degrees, and dunk it for a few seconds. Then scrape with a large knife. Hair should come off easy. Or you can pour hot water over it and do a little at a time.
If ya pour it the water needs to be hotter than 140.
Now that we've exhausted all possibilities, lets get started.

Adding lye to the water makes the process much easier -- just keep it off yourself and anything you don't want to ruin.

You can boil the water in large pot and fill with gunney sacks.  Then pull out one gunney sack and lay on pig then scrape that area.  Repeat the process.
