We wrap em the opposite way, Saran Wrap first, then butcher paper.  The Saran slows down freezer burn, and the butchers paper is heavier and doesn't pick up tears and holes as easy.

All you really need is a good knife, a grinder and a stuffer.  

Since I've stopped gutting deer, I've done away with the gambrel and bone saw as well.  Everything comes out boneless and the mess stays inside the carcass.

all you need is a sharp boning knife and some butcher paper.... double wrap if it's going to stay in the freezer longer than 6 months.... my deer never lasts that long... LOL
