I'm the guy 1Screagle talked into selling the "Legolas" Defiant back to.  (Stupid! Stupid! Stupid!)  Still regretting that one.  Hey, Ken, that return policy goes both ways!
The first custom bowyer I visited was Dave.  Shot more than a few bows since then and always seem to come back to the Dwyers.  I'm shooting a Toelke Whip that's just plain awesome for me, but I just put another order in for a new Dauntless.  (If you can have one great bow, why not have two!)  Here's my own personal take on Dave's different models.
1. Original:  Super quiet, and very smooth drawing.  A little thump on the release just to let you know it's a D bow.
2. Dauntless:  Dave's personal preference.  Enough said.
3. Defiant:  Pure hunting bow.  Quiet, manuverable, a little more stack at 29" than the others but not bad.  When I had it in my hands I was never thinking shooting targets, that bow was made to make meat.
4.  Endeavor:  Very smooth, very stable, very fast.  Took that bow elk hunting and felt it fit the bill about perfect.
As to which you order, simply wait for the WTA banquet and shoot them all, or better yet, go visit Dave and Sue in Holmen and shoot a bunch.  Good luck.
Mike

Bob- I'll definitely let you know if I decide to make the trek to Madison- thanks for all the input!

NBK- thanks for the post- very helpful! Definitely looking at the Endeavor---not exactly what I had in mind when I first started thinking longbow (I grew up shooting straight-limb classic D longbows my dad made), but it is growing on me! I like the idea of having a shorter bow for in the stand and for stillhunting. thanks again!

My Endeavor (it's not just a pretty bow- two deer, two hogs, one elk):
