I am in custom bow ordering process and have one huge dilemma.
Can anyone explain me what I will get if I go with -3/16 past center cut shelf.
What is main difference between it and center cut bows? Which are easier to shot well?

Once tuned, there is no advantage. The cut past center will allow you to shoot a stiffer arrow and be slightly more forgiving of arrow choices.
It will also allow you to adjust the bow to suit the arrow some. You will be able to add material behind the side plate to bring it more to center if need be in order to make an arrow tune.

The metal ILF risers are typically past center shot to allow for an elevated rest. I shoot off of the shelf so I used a furniture leg pad as a rug and strike plate. An Easton .400 Aftermath (18/64") is almost dead on center shot set up this way. With a 2018 arrow the tip points slightly left of center while on the rest. It still shoots well also
