I've used just about everything over the years -- leather, calf hair, nylon rugs, seal skin, feather rests, etc. They all  work, but for ease of application and durability, it's hard to beat Velcro.  That's what I have on my recurves and 3-piece td longbows.  Still use leather on my Hill style and r/d one-piece longbows.

Martin soft pad and martin soft rest, they work great and aid in tuning process, plus it's what Rick Welch told me to use, that's all the why I needed.and it has worked great, add some double sided carpet tape to the mix.

Velcro.  If you do a lot of stump shooting or like me all my practice is into the dirt or anything that catches my eye leather will get dirty.  When that happens on leather it makes a sound when drawing and has got me busted.  Velcro never makes a sound.

I like whitetail deer lower leg, with hair on.  It wears like iron, is super quiet, and last forever.  I use it for both rest and side plate.
