Hi sam, I look forward to seeing pictures of the head cheese and your report on how it tastes.  My great grandparents used to make it but I cannot recall ever having it.  I will try to make it when I start raising pigs.

If you dont mind, I would love to see an action photo of your tub cooking the pig as well.
