Black Bear Appetizer

I had 2 bear roasts given to me by my brother in law. I'm going to a party and wanted to make an appetizer with it. Any suggestions?

I was considering curing and smoking it (bear bacon) then making an appetizer with that.

Smoked pastrami.
Cut roasts into pieces about 1 1/2" thick. Lots of recipes online.
I've done deer and elk pastrami wrapped in bacon, I the smoker... To die for!

Bear roast is some of the best meat you'll ever wrap a lip around. I've done it many times in a cast iron Dutch oven. Seasoned to taste and cooked slowly until very tender and you'll think you're eating the finest roast beef you've ever had.  :p

Please don't waist a wonderful piece of bear roast by messing with it .
