"unroll' the deer heart by cutting in a spiral fashion and cut away all tough parts, etc. Flour and brown very fast in bacon grease or olive oil.  1/2 cook some bacon strips, 5 or so, and lay a few strips in the heart and roll back into a well, heart.  Wrap the remaining strips around the outside and tie with cooking string. BAke at 350 until done, 40 min(you're the best judge) remove and slice away.
I have asparagus with this usually. HEat some olive oil pretty hot and throw in the asp... when the asp.. gets nice bright green(4-5 min) put just about a 1/4 cup water in and cover. LEt the water completely evap. and viola! _BAxter
