Aint nothin wrong with that dairy beef, grew up on it. We always butchered the calf from Ol Daisy, our milk cow. The angus we raised were too valuable for us to eat   ;)  

Bought all the meat we eat anymore is our bison or game we harvest. I like it that way and aint heard any complaints from anybody else either.   :thumbsup:

Like I said you are a fortunate man.  :)  I really dislike having to buy meat. Liked it best when we lived on wild game. Moose on Sunday, dall sheep on Monday. Yup felt so good all the time too. Man needs meat.

Got the word yesterday i am not gonna get my bison. The deal fell through and won't happen again until October now. Dang.

Bummer but there's surely more than one bison supplier up there. I'd hate like heck to wait till Oct. Moose sounds good and I'll bet teh dall is too, that's one meat I've not had the pleasure of eating. Unless I win the lotto or something I probalby wont either.   :(  

Maybe ya could bum some hog meat off Calvin when he gets home   ;)

Doug I hope ya win the lotto! Sheep hunting is probably the best hunting experience one can have. At least in my opinion. And the meat is good. Real good.

I would love to get some alligator meat from Calvin or hog.

Gator is GOOD and those wild suth'n hogs are pretty fine too. Hope to ge some of that pork toward the end of next month myself   :thumbsup:

Keith, mostly we have the humps made into roast, and yes they are very good!! One thing we tried different last year was haveing the leg shanks cut bone in. Ossobucco (sp) is what it was called. Leg bone with meat around it so you eat teh marrow out of the bone.

I thought it was little different but most people were raving about it. Marrow has a deffinite wang but worth a try.

Ossobuco huh? Man never heard of that one.  :)

I have tried beef marrow and while the flavour was okay it was just too greasey for me. Bison marrow fat also? Guess if you were living on Buffalo alone, you would need to eat the marrow.

Hump roast sound good to me. I love deer neck roast.

Ossobuco, must be a fancy french word or something, wife went thru quite a process preparing it. And yea it's pretty fatty, our quests loved it but kind a greasy wangy for me. Guess I just don't have a very sophisticated tastebuds   ;)  But always said I'd try anything once  :D

Here is a short cut way of making a recipe that they used for buffalo tongue in the 19th Century/
par boil the tongue to facilitate peeling. Let it coool and peel it. Leave it whole and place it or a few of them in a gallon jar that is sterile clean. you can use the saved pickle juice from several jars of bread and butter pickles or you can make up a batch of bread and butter pickle brine, enough to cover the tongues in the jar pour almost boiling pickling brine over tongues to cover and let cool onlt slightly before tightening on the lid. allow to finish cooling to room temperature and then refridgerate for a few days to a week. Slice thin pickled buffalo tongue is great on crackers or sandwiches.
