Rabbit - Mmmm Good!!!
« on: August 25, 2005, 06:23:00 PM »
after cleaning and washing the rabbit cut all the legs of and cut the torso in half if its a big rabbit. if possible put the rabbit in a bowl of salt water in the fridge over night to draw all the blood out. the next day throw the rabbit in a pot of boiling water. let it boil for 20 to 30 minutes. (stick it with a fork to see how tender it is) take it out of the pot, roll it in flour and throw it in a hot skillet full of butter cook about 3 or 4 minutes flip it over and cook another 4 or 5 minutes.

Rabbit is the best meat I have ever put into my mouth. I haven't tred your way of cooking it. The best way I have found so far is to cut the rabbit up into 1/4 pieces and salt and pepper well. Dredge in flour and brown in a skillet with 3 tbs cooking oil or lard,(A cast iron skillet of course)  :)  add one onion, large cut up any way you like and water to just barely to the top of the pieces if your pan is full. Cover and let simmer on low heat until pieces are tender. Make up a batch of homemade biscuits. You need them for the fine gravy you will have. I have a hard time deciding which taste best the rabbit or the gravy.  :)

Ken, I don't think there is a bad way to prepare rabbit. The recipe I mentioned is simple and takes very few ingredients which makes it ideal for a camping situation. It doesn't take much in the way of spices to obtain a great taste but you have to use salt and pepper.  :) . The same recipe works for any game or meat from your grocer. I hope more people will come forward with their favorite recipes.I have found some good ones this way.

Same here. I use my above cooking methods to make everything because that's what I learned growing up, but hearing the way other people do it on here has helped me alot and given me alot of recipes to try out this year.
