Cook squirrel the same as rabbit. Check the post on rabbit. Stewing them down in a fine gravy is going to be hard to beat, especially if you have some home made biscuits and mashed potatos to go along with them. One of my favorites recipes!

Hi there,
I like to slow cook'em till the meat falls off the bone. I just put them in a deep skillet and partially cover with water over med to low heat.
Put a lid on it for a good long while.
Check on it now and again, you might need to add a little water from time to time.
The only seasoning is a little salt and pepper.
After all the meat is falling off the bone, pick them clean and use the meat in all sorts of stuff.. add it to spagetti sauce with sausage and meatballs. I love it with my venison chili or in a home made pot pie..
I always cook the meat that way then use it in a variety of dishes. For me thats the only way to use squirrels. Other wise that meat is just too darned tuff!

My favorite way to eat them is also to slow cook them then pull off of the bone and shread the meat.  After you shread the meat make some country gravy, add the squirel and serve over bisquits and mash potatoes.

I agree with the others; slow cooking is the way to go.  However, I put my squirrels in a crockpot with water and a package of powdered onion soup.  I set it on low and go to work.  When I come home the meat is falling off the bones.  I carefully remove the meat and shred it by hand.

My favorite recipe is my "Lazy Man's Squirrel Pie".  Get the ready to use pie crust.  Put it in a pie pan, or cup cake pan if you want lots of little pie appetizers.  Mix a can of Veg-all (mixed veggies), your meat from one or two squirrels, and a can of chicken gravy in a bowl until pretty moist (some of the liquid will evaporate during baking, so make the mix wetter than you think it should be, but not quite like stew),  Season to taste (I use salt, pepper, and my secret ingrediant: thyme).  Spoon the mix into the pie crust(s).  Then cover with more crust and make sure to pinch or fold over the edges.  Bake in a medium heat oven until golden brown.  I usually use the cup cake pans myself, and these little pot-pies are my favorite.  Everyone seems to love them, even people who had reservations about eating game, especially tree rats.

Seth, congratulations on that squirrel; I've only taken one with a longbow myself so far.  However, I've taken many with a shotgun in the past, and you should be aware that squirrel is very prone to frezzer burn.  So wrap them well and try not to leave them in there too long.

I like to slow cook squirrel too, I add some cream of mushroom soup, & whatever veggies you like, 2 Jalapeno peppers, & season to taste. If you are time thrifty you can just fish the bones out with a fork. Mitey good!!  Frank

Thanks for all the tips guys. All are ones i hope to try real soon. What i ended up doing was going a different route.. heres the recipe have fun deboning the squirrel it aint easy...lol..

1 green bell pepper
1 orange bell pepper
1 medium onion
4-5 cloves garlic
salt pepper emerils
worcestershire
olive oil
Shredded Cheese(optonal)
tortillas
de-boned meat of one squirrel( pry work better with two or three)

Put olive oil in bottomw of a large skillet start heating it up..slice the peppers and onion into thin slices and throwem in when the skillet is hot. stir occasionally while chopping garlic throw it in when chopped. cok till onions start to brown a little bit push to side still turning occasionally put in squirrel season with s p and emeril cook till almost done then mix all together stirring occasionally.. then put in worcestershire and let simmer for a few minutes.. warm up tortillas and dish out i liked a little cheese and picante sauce on mine..
