Bacon Wrapped Turkey Breasts

Hey All,

This is Jake H posting from BigDog's account.

THP asked over in BigDog's morels thread for the recipe for the bacon wrapped turkey breasts.

Truthfully, it's nothing fancy, just something that I made up as I went along:

wash and press flat 1 turkey breast
dust with poultry spice
lay 1/4 stick of butter on the turkey breast and
roll breast up around butter stick.
spice the outside of the roll with paprika and fresh rosemary
wrap rolled breasts with bacon slices using toothpicks to hold the bacon on and to keep the breast rolled up.

bake at in a closed roast pan at 350F til done (about 25min/lb I would guess, but we didn't have a meat thermometer or a scale so you'll have to play that part by ear)

Enjoy with yummy morels and fresh asparagus (or fiddleheads if you have some)

Butter AND Bacon.  Two great tastes that taste great together.  Any recipe with both has got to be G-G-Good!!!!
