Home made biscuits

For those that really enjoy good southern cooking.  :)
 First things first! Most biscuits are ruined by over working the dough, Keep this in mind.
 2-cups sifted, selfrising flour
 1/4-cup shortening,liquid or solid
 3/4-cup milk,fresh,sour,or butter,milk (sour or butter milk are my favorites)
 
Sift flour into large bowl

add shortening.I like to use a fork to mix shortening and flour till it look like grainy pebbles.mix in one area of the flour.

Add milk. mix well with the flour/shortening before incorporating any more flour.I use half my milk to start then gradually add the rest mixing till I have a thck mortar like consistency.Knead lightly. Dusting your hands and the dough ball with flour keeps dough from sticking to you and you dough board.
 
Make balls of dough about two inches in diameter and place on a greased cookie sheet,I flatten mine to a half inch thick,  place in a preheated 350 oven for twenty minutes or until brown. This recipe make six to eight biscuits.
 This recipe can also be found on some flour bags. These are great with butter, jelly,honey, molasses and by their selves.

Way to go Matt!!!!  Very good advice as to not overwork the dough.  Hope all is well.

Al, I learned the hard way about over working the dough.A couple of times my biscuits came out of the oven as hard as  rocks and I couldn't understand why for the longest time. :)
 I have found, after the fact, that just as soon as all the ingredients are homogenized stop the kneading process. This has produced my best results.
  I now have a grip on making biscuits!  :)
